“Our food doesn’t necessarily look Indian on the plate,” Chet explains. “It’s modern and progressive, but an Indian grandmother would still recognize its roots.”

This cookbook beautifully combines 60 signature recipes with personal essays, delving into Chet’s memories of the Indian subcontinent and the dishes that shaped him. Explore iconic BiBi creations like “Nimbu Pani,” “Wookey-hole cheese papad,” and the celebrated “sharmaji Lahori Chicken,” alongside playful interpretations of classics such as “seekh Kebabs” and “Alphonso Mango Lassi.” An extensive “Essentials” section provides recipes for BiBi’s unique masalas, stocks, and other fundamental elements of the restaurant’s menu.

This book also includes reflections on the restaurant from esteemed guests.
